Elenidis for Trigona Panoramatos in their birthplace
Trigona Panoramatos means triangles of Panorama. Panorama is the neighbourhood in which Giannis Elenidis first invented Thessaloniki’s patron dessert in 1960: the so-called ‘traingle’. The ‘trigono’ itself refers to the triangular parcel of crispy, syrupy filo pastry that is filled with homemade cream, piped to order (much like good Italian cannoli, but better).
As well as at the original neighbourhood in Panorama, Elenidis children and grandchildren now also run two other stores. The trigona themselves are out of this world. Crispy, crunchy, flakey and held together by the velvety, creamy core which is like a kiss inside your mouth.
